all meat soups that i know of specifically mention the fact that there's meat
some of them aren't even called "soup" because of it
i mean fish soup obv has fish in it
canja has old chicken meat of course but everyone knows that. you cant just replace it with soy cubes, it's not canja anymore, it needs the chicken
caldo verde has chouriço but ive seen some vegan alternatives. still, it's vegan caldo verde, not vegan "soup"
soup is potato, cabbage and bunch of veggies thrown in
unless it's a kid's soup, that has meat in it yeah. kids need their sustenance. i concede on kids soup.

Yeah veg salad seems redundant but with soups in my experience there's more often hidden meat in it than not, especially in italy it's a norm that even soup with just veggies is made with chicken broth so i'd find it useful info if it's specified that it's vegeterian, which never happens
